You have to make some adjustments and trial error. A combination of re-casting jet and adjust the air-fuel ratio (idle mixture) screw eliminate the problems you describe. Learn how to make a "test plug" run the bike, read the plugs and adjust the air-fuel ratio accordingly. Even if you change to an S & S or Mikuni, still need to hone their carbohydrates.
